Leading baking technology group, Auto-Bake, recently ‘opened the oven doors’ on a new test oven at its Chicago area test bakery. Located at the premises of Auto-Bake Americas--a joint venture between Auto-Bake and its North American distributor, Dunbar Systems.  This allows prospective purchasers and baking professionals to trial a variety of baked goods.

“The capability to test-bake and run technical evaluations on our Serpentine® systems has been a key differentiator of Auto-Bake for many years,” said Auto-Bake’s marketing director, Amanda Hicks. “We have always invited purchasers to be present for trials and test-runs; similarly, our clients have the opportunity to work with us to perfect their own recipes in our expanding network of test bakeries around the world.”

According to Michael Dunbar, executive vice president, Dunbar Systems, the new Serpentine® test oven, which incorporates Auto-Bake’s latest ‘free pan’ transport technologies, brings added dimension to the Chicago test bakery. “Now industrial baking groups have even more flexibility when trying out the Serpentine® oven,” he said. You can bake absolutely anything in this oven--from pastries and breads to cakes and cookies.”

In addition, said Hicks, the new Chicago test oven exemplifies all the ‘tried-and-proven’ virtues of Auto-Bake’s unique Serpentine® baking technology--small footprint, flexibility, rapid throughput, and consistent results. This is the legacy of the compact Serpentine® transport system, where pans are transported along multiple horizontal levels, maximizing vertical cubic capacity and occupying just one-tenth the footprint of an equivalent tunnel oven. Auto-Bake ovens are also inherently energy efficient due to this compact form-factor.
