Like the oven and cooler, the Auto-Bake Proofer is a serpentine design and is an integral part of the overall production line. The panned product passes from the infeed section directly into the Proofer at a low level, is vertically transported to the top level and then proceeds down through the process.

Hnery Group IncHenry Group Tray ProoferClick to EnlargeThe Henry Group Tray Proofer - The Automatic Tray Proofer is equipped with push bar loading and unloading together with lightweight double hung stabilized trays. The proofer trays are constructed of aluminum cross tube supports with bolt on stainless fingers and magnetic strips for non-slip grip on steel pans. The proofing system is constructed of either stainless or hot dipped galvanized components.  Exterior Cam-Lock enclosure panels have stainless exterior and interior finish for an energy efficient and sanitary environment. Air Waterwash System maintains proper control of humidity and heat for a constant proofing environment. Complete with a variable frequency controller for adjustable proof times. Relative Humidity is controlled with digital controllers and electronic sensors with modutrol steam valves to assure accuracy.   The Tray Proofer components are further described below:

Pan Grouping Conveyor - Grouper is designed to accept the pans or peel boards traveling the hard way (short dimension parallel to flow) in random order.  The pans are then accumulated into groups to fit the Proofer Loader.  The groups are then released to the Loader while holding the first pan of the next group.

Loader and Unloader -  Infeed and discharge conveyors consisting of multiple strands of bent edge stainless steel table top chain.  Automatic push bars to transfer the pans / peel boards onto and off of the tray loading / unloading decks.

Enclosure System -  Sidewall panels are 4” thick, with cam-lock style joints securing one panel to the next.  Individual panel construction is 22 gauge 304 stainless steel inside and out, with foam core insulation bonded on both sides.  Special construction assures that there is no through metal. 

Air Conditioning Unit -  The Air Conditioning Unit circulates the Proofer air and provides controlled heat and humidity. 

Exhaust System -  Automatic Proofer exhaust system to purge proofer interior air quickly.

The Henry Group Traveling Rack Proofer & Retarder Features:
The Henry Group's Traveling Rack Proofer is designed with monorail guides for racks that are configured to handle standard or specialty pans.  Racks are powered the entire length of travel with variable dwell time to modify proof and/or retard times.  Optional Automatic Rack Loaders and Unloaders, Stainless structure and Automatic pneumatic doors are also available.
