Click to EnlargeAuto-Bake Serpentine® Cooler - The Auto-Bake production line itself can be custom built to include a Serpentine® Ambient, Refrigerated or Freezing Cooler. The Serpentine® System moves the baked product thru the serpentine® system from the oven to enter the cooler at high level and proceeds down through the process (which is the reverse of the oven).
The Auto-Bake range of modular Serpentine® coolers, provide a controlled environment to ensure the highest quality finish to your product. Traveling in the serpentine® transport path the cooler is custom designed to meet your needs and fully integrated into the serpentine® system.
The Auto-Bake Ambient Cooler is an in-pan cooler which assists depanning by allowing the product to cool sufficiently for handling purposes. The cooler is constructed similar to oven for interchangeability of parts and reduction of spare parts inventory. The Auto-Bake Ambient Cooler is fitted with variable speed inverter style side-mounted fans that direct ambient air across the baked product, removing flash heat.
Dwell time in the Auto-Bake Ambient Cooler is governed by the fixed relationship to the oven bake time/speed, which is determined by the product requirement. Typically, system has a dwell time of approximately 2/3 of the bake time. However, this can be shortened or lengthened according to the process requirements.
Additionally, more cooling sections can be added to the Auto-Bake line to accommodate refrigeration or even freezing of the product as the process requires. Product is generally robotically depanned and loaded onto Auto-Bake cooling carriers which carry the product through the refrigerated cooler and/or the freezer before exiting the line and traveling on to packaging.
Dunbar Systems, Inc. also works with a local enclosure and conditioning supplier, Broesch Mechanical. They have supplied enclosures and conditioning for several of our Auto-Bake installations. They provide a range of conditioning from ambient air movement to refrigeration to freezing of the products or frozen dough.

- I.J. White Modem Support and Auto-PM: Direct on-line support is optional in our Electrical Control Center with automatic Preventative Maintenance module
- Main Drive Chain Drip Pans: The Drip Pans help keep drive chain oil off the Spiral belt and your plant floor. These optional Drip Pans are removable and easy to clean.
- Ultra Series Drive: To promote longer drive chain life, Ultra Series has multiple drive segments. This design reduces Drive Chain stretching and wear.
- Heavy-Duty Drive Cage Design: Prevents “hour glassing” and lowers belt tension, which assures maximum operating belt life.
- Heavy-Duty Frame Construction: All heavy walled, closed end welded tubing for superior strength.
- Typhoon Belt Washing Station: Patented Rotary Head design by I.J. White utilizing High Pressure for cleaning of the spiral belt with an air dry section.
- Powerwash 2000: This portable heavy duty High Pressure System is constructed in Stainless Steel. Features such as a sanitizer tank and quick disconnects are standard.
Refrigeration Coil & Fan Specifications:
-
Auto-Pressurization System (APS): Reduces moist air infiltration that migrates into the Blast Freezer and helps keep the Refrigeration Coils free longer from ice and snow build-up.
- Superior Coils: Rugged construction for long life and advanced design for efficient heat transfer.
- Advanced Defrost Technology: I.J. WHITE’S Extended Production System (EPS) can be configured as an option to meet your specific production demands and provide longer runs between defrost cycles.
Insulated Enclosures:
- Factory Installed Doors: For a secure fit. No on-site fitting and no internal wood.
- Cam Locked and Banded Panels: With Internal continuous perimeter metal bands to withstand high static pressures inside the enclosure.
- Factory Manufactured Corners: That tie into Cam Locked Wall Panels, no field cutting or fitting.
