Tortillas
A tortilla is a round flat bread that is very thin, unleavened and made from a finely ground maize or wheat flour. Since Pre-Columbian times, people have been making the traditional tortilla using corn maize. A newer innovation was to use wheat flour instead of corn maize. The wheat flour tortillas are made using an unleavened, water based dough and then pressing them and cooking them as you would a corn tortilla. Tortillas vary in diameter from approximately 4” to over 12”, depending on the region you are in and the reason for which it is intended.
