Snack Cakes
Snack Cakes generally refer to small batter cakes in a finger cake, cupcake, mini cake or specialty form. Snack cakes are normally made with some type of flour, a sweetener, a binding agent, fats, a liquid, flavors and a leavening agent. Some cakes don’t use a leavening agent but instead depend on air bubbles in the dough to expand and cause the cake to rise. The Snack Cakes are often frosted and individually packaged and then sold as a retail product.

There are literally millions of cake recipes (some are bread-like and some are rich and complex) and many are centuries old. Commercial baking equipment and directions have been so perfected and simplified that even the amateur baker may produce the “perfect” cake.
