Hearth Goods
Products which are not baked in pans but are baked directly on the oven hearth are called "Hearth Baked Products". The latest high end artisan breads, sour doughs, ciabatta, Turkish and French country loaves are all considered hearth baked products. Recently, hearth baked products and artisan breads have made a dramatic rise in worldwide popularity. Making a high quality artisan bread has become more of an art than a science: The ingredients must be mixed, fermented, shaped, proofed and baked with special care so that the end result is the perfect formation of both crust and crumb. Depending on the type of hearth surface used a "crusty" crust with a homemade appearance can be achieved.
